Cherry Cobbler Cookies are outstanding! These fantastic cookies are made with fresh cherries and cherry Greek yogurt. They are absolutely scrumptious and perfect for summer desserts when cherries are in season. One bite and you'll be convinced that this recipe is a keeper!

Equipment

  • 1 18x26" cookie sheet pan
  • 1 large mixing bowl
  • 1 whisk
  • 1 wooden spoon
  • 1 spatula
  • 1 cherry pitter or sharp knife to pit cherries
  • 1 1/4 cup cookie scoop
  • measuring cups
  • measuring spoons

Ingredients
  

  • 2 1/2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 1 cup granulated sugar
  • 8 oz. container Tart Cherry Greek Yogurt (see note below)
  • 1 1/2 cups cherries pitted and diced
  • 8 tbsp. unsalted butter melted (1 stick)
  • 1 tbsp. vanilla extract
  • 1 tsp. almond extract
  • 1 tsp. baking soda
  • 1/2 tsp. sea salt

Instructions
 

  • Stir Greek yogurt thoroughly.
  • Melt butter and combine with Greek yogurt in a large mixing bowl.
  • Add sugar, vanilla, almond extract, baking soda and salt and whisk until well combined.
  • Add flour and cherries and stir with a wooden spoon to combine.
  • Scoop out dough with a one-quarter cup cookie scoop and place on greased cookie sheets.
  • Bake at 350° for about 18-20 minutes or until done.
  • Rotate cookie sheets on oven racks every seven minutes of baking time.
  • Cool completely.

Notes

NOTE:  I used a ¼ cup cookie scoop which is a lot of dough. If making regular sized cookies, this recipe will make between 3-4 dozen and you need to cut the cooking time down by half!
 
NOTE: make sure you use a full 8-oz. container of Greek yogurt. Most containers are 5.3-oz. these days. (I used Noosa because it contains a full 8-ounces).
 
NOTE: My cookies were so large they took about 22 minutes to bake completely.
 
NOTE: This recipe uses NO eggs.
