Cherry Melt-In-Your-Mouth Cookies

Cherry Melt-In-Your-Mouth Cookies are awesome! These delightful cherry cookies just seem to dissolve in your mouth. They'll cure any sweet tooth craving and are so delectable you'll be drooling over every bite. They're the perfect dessert for summer when cherries are in season. We loved them.

Equipment

  • 1 18x26" cookie sheet pan
  • 1 electric mixer
  • 1 wooden spoon
  • 1 large mixing bowl
  • 1 medium mixing bowl
  • 1 cherry pitter or sharp knife to pit cherries
  • 1 spatula
  • measuring cups
  • measuring spoons
  • 1 1/4 cup cookie scoop

Ingredients
  

  • 1/2 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter softened (1 stick)
  • 1/2 cup canola oil or vegetable oil (or use coconut oil or avocado oil)
  • 1/2 tsp. vanilla extract (or substitute almond extract)
  • 1 large egg
  • 1/2 tsp. sea salt
  • 1/2 tsp. cream of tartar
  • 1/2 tsp. baking soda
  • 2 3/4 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 1 cup cherries pitted, diced

Instructions
 

  • Pit and dice cherries.
  • Set aside.
  • In a large mixing bowl, soften butter.
  • Add oil, sugars, vanilla, egg, salt, cream of tartar and baking soda.
  • Mix with an electric mixer to combine.
  • Add flour and cherries.
  • Stir with a wooden spoon to combine.
  • Spray cookie sheets with cooking spray.
  • Using a ¼ cup cookie scoop, scoop dough and place on prepared cookie sheets.
  • Bake at 350° for 18-20 minutes or until done.
  • Rotate cookie sheets on oven racks every seven minutes of baking time.
  • Cool completely.

Notes

NOTE: larger cookies take longer to bake than regular sized cookies.
 
NOTE: Using a cherry pitter will reduce the length of preparation time for this recipe.
 
NOTE: You can also substitute almond extract for the vanilla extract in the recipe.
