  • measuring cups
  • measuring spoons
  • 1 rubber spatula
  • 1 medium sauce pan
  • 1 whisk

Ingredients

BROWNIES:

  • 2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 1 1/2 cups brown sugar packed
  • 1/2 cup granulated sugar
  • 1 cup unsalted butter softened (2 sticks)
  • 2 large eggs
  • 1/4 tsp. sea salt
  • 2 tsp. vanilla extract
  • 1/2 cup banana mashed with a fork (about one medium-large banana)
  • 12 oz. pkg. semi-sweet chocolate chunks or chocolate chips
  • 1 cup pecans finely diced

CHOCOLATE FUDGE ICING:

  • 3 tbsp. unsalted butter melted
  • 2 tbsp. cocoa
  • 2 cups powdered sugar
  • 3 tbsp. 2% milk
  • 1 dash salt
  • 1 tsp. vanilla extract

Instructions

BROWNIES:

  • Mix butter, eggs, sugars, salt and vanilla with an electric mixer until well mixed.
  • Add flour, mashed banana, pecans and chocolate chunks.
  • Stir with a wooden spoon to combine.
  • Spray a 9x13” glass baking dish with cooking spray.
  • Spread brownie mixture into prepared pan.
  • Smooth the top with a knife or rubber spatula.
  • Bake at 350° for 30-40 minutes just until lightly golden brown, and a toothpick inserted in center comes out clean.
  • Cool completely before adding Fudge Frosting.
  • Allow icing to set about 15 minutes before cutting into bars.

CHOCOLATE FUDGE ICING:

  • Cook butter and cocoa in medium sauce pan for 1-2 minutes on medium heat.
  • Remove from burner.
  • Add powdered sugar and milk and whisk to combine.
  • Then add a dash of salt and vanilla.
  • Spread fudge icing over brownies working quickly so frosting stays smooth.

Notes

NOTE: You really have to spread the icing fast or it will harden too quickly.
