Easy Mongolian Beef

This amazing 30-minute meal uses ginger, green onions and jalapenos in a tasty sauce made with brown sugar and soy sauce. It's terrific for weeknight meals when you have to get a meal ready in a jiffy. Gluten free.

Equipment

  • 1 large skillet or wok
  • 1 wooden spoon or spatula (or both)
  • 1 large mixing bowl
  • measuring cups
  • measuring spoons
  • 1 large stock pot with lid to cook rice
  • 1 small bowl
  • sharp knife to cut vegetables
  • chop sticks to serve, if desired

Ingredients
  

  • 1 lb. beef bottom round steak for stir fry (already sliced in 1/8 or 1/16-inch thick slices)
  • 2 tbsp. cornstarch
  • 1-2 tbsp. avocado oil or olive oil
  • 1 jalapeno pepper seeded and finely diced
  • 2 tbsp. fresh ginger peeled and minced
  • 4 large cloves garlic minced
  • 1/2 cup Tamari gluten free low sodium soy sauce a low sodium soy sauce is a must or the recipe will be too salty
  • 1/2 cup brown sugar loosely packed
  • 2 tsp. cornstarch
  • 3 green onions sliced
  • 2 cups hot, cooked rice

Instructions
 

  • Toss 2 tbsp. cornstarch with beef in a large bowl.
  • Set aside.
  • Combine soy sauce, brown sugar and 2 teaspoons cornstarch in a small bowl.
  • Stir to combine and set aside.
  • Pour avocado oil into a skillet and heat to medium heat.
  • Add jalapeno and ginger and sauté a couple of minutes.
  • Add garlic and sauté one minute.
  • Stir in beef as evenly as possible.
  • Stir frequently for about 5 minutes until beef is no longer pink.
  • Add sauce ingredients.
  • Stir and heat until sauce thickens about 1-2 minutes.
  • Stir in green onions.
  • Serve over hot, cooked rice.
  • Garnish with additional green onions, if desired.

Notes

NOTE: You must use very thinly sliced beef for this recipe or the beef won't be tender enough.
