Buttermilk Cucumber Tomato Salad

Buttermilk Cucumber Tomato salad is so delightful and refreshing. It uses English cucumbers and Roma tomatoes in a buttermilk and apple cider vinegar dressing. Quick, easy and gluten free. This is a great way to use up garden produce and feed your family a healthy and delicious side dish at the same time. If you enjoy tomatoes and cucumbers, you'll love them in this great salad.

Equipment

  • 1 medium serving bowl
  • 1 wooden spoon
  • measuring cups
  • measuring spoons

Ingredients
  

  • 2 English cucumbers cut oblique style
  • 3 roma tomatoes cut oblique style
  • 1/2 cup red onion finely diced
  • 1 pint buttermilk
  • 1 tsp. pink Himalayan sea salt
  • 1 tbsp. granulated sugar
  • 1 tbsp. apple cider vinegar
  • 1 tsp.. Salt and pepper to taste
  • 6 grape tomatoes for garnish, if desired

Instructions
 

  • Combine buttermilk, sea salt, sugar and apple cider vinegar in a medium salad bowl.
  • Add cucumbers, roma tomatoes and red onion.
  • Stir well to combine.
  • Season to taste with salt and pepper.
  • Refrigerate at least 2 hours before serving.
