Blueberry Romaine Salad is incredibly delicious. This fabulous salad includes blueberries, kiwis, mangos, cashews and Swiss cheese in a tasty homemade poppyseed dressing. Perfect company salad. Gluten free.

Equipment

  • 1 large salad bowl with tongs
  • 1 sharp knife to cut and pare fruit
  • measuring cups
  • measuring spoons
  • 1 blender
  • 1 small bowl with lid to store dressing

Ingredients
  

SALAD:

  • 10 oz. pkg. romaine lettuce mix
  • 2 cups fresh blueberries
  • 1 cup kiwi quartered
  • 1 cup mango diced
  • 1 cup salted cashews
  • 1 cup Swiss cheese

SALAD DRESSING:

  • 1/3 cup white vinegar
  • 1/3 to 1/2 cup honey (or granulated sugar)
  • 1 tbsp. red onion chopped
  • 2 tsp. poppy seeds
  • 1 tsp. ground mustard
  • dash worcestershire sauce
  • 1/2 tsp. sea salt
  • 1/4 tsp. ground black pepper
  • 1 cup avocado oil

Instructions
 

SALAD:

  • Layer salad ingredients in a large salad bowl.
  • Refrigerate until ready to serve.

SALAD DRESSING:

  • Process salad dressing ingredients in a blender until emulsified.
  • Add to salad just before serving.

Notes

NOTE: I use the chopper option on my immersion blender to process the salad dressing.
 
NOTE: Lea & Perrins makes a Worcestershire sauce that's gluten free.
