Kale, Beet and Berry Salad will knock your socks off! This delicious salad includes fresh raspberries and blackberries, macadamia nuts and asiago or parmesan cheese. Perfect for company meals, but also great for lunch anytime. This crunchy side dish is healthy, low calorie, gluten free and clean eating.

Equipment

  • 1 large salad bowl with tongs
  • 1 sharp knife to cut vegetables

Ingredients
  

  • 7.5 oz. container Taylor Farms kale & beet salad mix
  • 6 oz. fresh spinach leaves
  • 2 ribs celery diced
  • 1/2 cup matchsticks carrots
  • 1/2 red bell pepper diced
  • 6 oz. container fresh raspberries
  • 6 oz. container fresh blackberries
  • 1 cup whole macadamia nuts plus more for garnish
  • 1 cup asiago cheese shredded, (either Romano or parmesan can be substituted)
  • Healthy Lemon Poppy Seed Dressing or your favorite poppyseed dressing

Instructions
 

  • Combine kale mix and spinach in a large salad bowl.
  • Layer with celery, carrots, bell pepper, raspberries, blackberries, macadamia nuts and cheese.
  • Refrigerate until ready to serve.
  • Toss salad before serving.
  • Serve each plate of salad with a dollop of Healthy Lemon Poppy Seed Dressing or your favorite poppyseed dressing.

Notes

NOTE: Healthy Lemon Poppy Seed Dressing has a strong lemony flavor. You may prefer dialing back the lemon or trying your favorite Poppyseed dressing mix.
 
NOTE: this is also good with sesame seeds.
