Crockpot Gluten Free Turkey Noodle Soup is good down to the last drop! This fantastic soup is wonderful, slimming comfort food after the holidays! It's a gluten free version and also so easy since it's made in the crockpot. Great for week-night meals.
1leekgreen top removed, washed thoroughly and sliced
1mediumonionchopped
1yellow bell pepperchopped (or any other color)
2ribscelerydiced
2clovesgarlicminced
3smallcarrotspeeled, sliced
1cupfrozen peasthawed
4cupsturkeychopped
2tsp.pink Himalayan sea salt
3/4tsp.ground black pepper(see note)
1tsp.dried thyme
1tsp.dried rosemary
1tbsp.dried parsley
8oz.Ronzoni gluten free thin spaghetti noodles broken in half or thirds
Instructions
Pour broth into crockpot.
Add turkey, leek, onions, bell pepper, celery, garlic, carrots and seasonings.
Cook on low heat for about 4-5 hours.
Add noodles and cook about 30 minutes or until noodles are tender.
Add peas and cook an additional 15 minutes.
Check seasonings.
Add more if desired.
Notes
NOTE: I enjoy a lot of pepper in my soups, but if you’re not fond of it, I recommend scaling back to about 1/3 to ½ tsp. pepper.NOTE: The noodles will absorb a lot of liquid. You may have to thin the soup with additional water or broth, especially after the soup sits out or is refrigerated.NOTE: Preparation time does not include time required to cook off a turkey carcass and debone meat.
