Crockpot Cock-a-Leekie Soup

Equipment

  • 1 crockpot
  • 1 sharp knife to cut vegetables
  • 1 vegetable peeler
  • measuring cups
  • measuring spoons
  • 1 wooden spoon
  • 1 soup ladle

Ingredients
  

  • 2 cups cooked chicken cubed (I used leftover rotisserie chicken)
  • 3 leeks green top removed, washed thoroughly and sliced
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 ribs celery sliced
  • 3 large potatoes peeled and cubed (Yukon Gold are good)
  • 2 large carrots peeled and sliced
  • 48 oz. container chicken broth
  • 1 tsp. fresh parsley to taste
  • 1 tsp. Salt and pepper to taste
  • 1 tsp. dried thyme
  • 1 large bay leaf or two small bay leaves
  • 1 tbsp. fresh, snipped chives for garnish, if desired
  • 1 tbsp. fresh parsley for garnish, if desired

Instructions
 

  • Place chicken, leeks, onion, garlic, celery, potatoes, carrots and chicken broth in a large crockpot.
  • Add salt and pepper, parsley, thyme and a bay leaf.
  • Cook on low about 5 hours.
  • Remove bay leaf.
  • Remove to individual bowls.
  • Garnish with fresh parsley and snipped chives.
