Amish Breakfast Casserole is a fantastic entree for holiday breakfasts! This one uses 2 meats, 3 cheeses, hash browns, eggs and bell peppers. The flavors blend incredibly well. This amazing casserole is gluten free.

Equipment

  • 1 9x13" glass baking dish
  • 2 large skillets
  • 1 sharp knife to cut vegetables
  • 1 large mixing bowl
  • 1 wooden spoon
  • measuring cups
  • measuring spoons
  • 1 hamburger chopper to chop sausage down into small pieces while frying

Ingredients
  

  • 1 lb. bacon diced
  • 1 medium sweet onion chopped
  • 6 large eggs lightly beaten
  • 4 cups frozen hash browns shredded, thawed
  • 2 cups sharp cheddar cheese shredded
  • 1 1/2 cups small curd cottage cheese
  • 1 1/4 cups Swiss cheese shredded
  • 1 lb. mild, bulk pork sausage
  • 1/2 red bell pepper diced
  • 1/2 green bell pepper diced
  • 1 tbsp. fresh, snipped chives for garnish

Instructions
 

  • In a large skillet, cook bacon and onion until bacon is crisp; drain.
  • In a separate skillet cook sausage and bell peppers.
  • Use a hamburger chopper to break the sausage meat down into small pieces while frying.
  • In a very large mixing bowl, combine the remaining ingredients; stir in bacon mixture and sausage mixture.
  • Transfer to a greased 13-in. x 9-in. x 2-in. baking dish.
  • Bake, uncovered, at 350° for 35-40 minutes or until set and bubbly.
  • Let stand for 10 minutes before cutting.

Notes

NOTE: You can also make this ahead and refrigerate overnight before baking.
