Fudgy Brownie Cookies

These fabulous cookies have triple the chocolate flavor with Ghirardelli chocolate, Hershey's cocoa and Hershey's Toll House Chocolate Chunks. Fudgy, gooey and great for holiday baking, potlucks, tailgating parties and sporting events like the Super Bowl, March Madness or MLB Playoffs!

Equipment

  • 1 18x26" cookie sheet pan
  • 1 large mixing bowl
  • 1 whisk
  • 1 wooden spoon
  • 1 large cookie scoop
  • measuring cups
  • measuring spoons
  • 1 microwave
  • 1 microwaveable dish
  • 1 spatula

Ingredients
  

  • 3 oz. Ghirardelli unsweetened chocolate (see note below)
  • 1 stick unsalted butter (1/2 cup)
  • 3/4 cup granulated sugar (or 1 to 1 1/4 cups if you prefer a sweeter cookie)
  • 2 tbsp. cocoa
  • 1 tbsp. vanilla extract
  • 1 large egg
  • 1/2 tsp. sea salt
  • 1/2 tsp. baking powder
  • 1 1/4 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 1 1/2 cups chocolate chunks

Instructions
 

  • Place chocolate and unsalted butter in a microwave-proof dish.
  • Microwave 30 seconds and stir.
  • Microwave another 30 seconds and stir again.
  • Microwave 10-20 more seconds until mixture is completely melted.
  • Stir once again and add granulated sugar.
  • Add cocoa, vanilla extract, egg, salt and baking powder and combine with a whisk until smooth.
  • Add flour and chocolate chunks and stir to combine.
  • Mixture will be thick.
  • With a one-quarter cup cookie scoop, scoop cookie dough and place on a greased cookie sheet.
  • Chill dough about 30 minutes.
  • Lightly press cookies with the palm of your hand before baking.
  • Bake at 350° about 15-16 minutes or until cooked through.

Notes

NOTE: Smaller cookies will bake in less time.
 
NOTE: For a sweeter cookie use sweetened chocolate and add an additional ¼ to 1/2 cup granulated sugar.
 
NOTE: You must chill the dough before baking if you want a good result.
 
NOTE: These cookies are extremely chocolaty. If you don't care for such a strong chocolate taste, decrease the chocolate from 3-ounces to 2-ounces, or use a less concentrated chocolate like a Baker's unsweetened chocolate baking bar.
