  • 1 electric mixer
  • measuring cups
  • measuring spoons
  • paper liners
  • 1 medium mixing bowl

  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 4 medium over-ripe bananas mashed
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1 large egg
  • 1/4 cup coconut oil
  • 2 tsp. vanilla extract
  • 1/2 cup almonds sliced
  • 1/3 cup Nutella as needed (one teaspoon for each muffin)

Instructions

  • Preheat oven to 425°F.
  • Line muffin pan with paper liners.
  • Spray liners with cooking spray.
  • In a medium bowl, combine flour, baking soda, baking powder and salt.
  • Set aside.
  • In a large bowl, combine bananas, granulated sugar, brown sugar, egg, coconut oil and vanilla.
  • Mix with an electric mixer until smooth.
  • Stir in the flour mixture and almonds with a wooden spoon until just moistened.
  • Fill muffin liners almost to the top.
  • Spoon about 1 teaspoon of Nutella on top of each muffin.
  • Swirl Nutella into the muffin batter with a bamboo skewer.
  • Bake muffins for 5 minutes at 425°.
  • Reduce heat to 350° and continue baking an additional 15-19 minutes, or until a toothpick inserted in the center comes out clean.

Notes

NOTE: A bamboo skewer works better than a toothpick for swirling the batter.
