Pinto Bean Chili is absolutely amazing. This hot and spicy chili is filled with 2 kinds of beans, ground beef seasoned with homemade taco seasoning, and lots of veggies. It's fantastic served with additional sliced jalapeno or avocado, cheddar cheese, sour cream, salsa, tortilla chips or Fritos corn chips. This gluten free and clean eating recipe is wonderful for company or family dinners, tailgating parties or potlucks. If you enjoy chili, this one really hits the spot.

Equipment

  • 1 crockpot
  • 1 large skillet
  • 1 hamburger chopper to break meat down in small pieces while frying
  • measuring cups
  • measuring spoons
  • 1 soup ladle

Ingredients
  

  • 2 lbs. 93% or 96% lean ground beef cooked and drained
  • 2 batches Homemade Taco Seasoning or 2 packets taco seasoning
  • 1 large white or yellow onion finely chopped
  • 3 cloves garlic finely minced
  • 1 leek green top removed, thoroughly washed and sliced
  • 2 ribs celery diced
  • 2 14.5-oz. cans diced tomatoes with green chilies undrained
  • 29 oz. can tomato sauce
  • 1 large green bell pepper chopped
  • 1 large orange bell pepper chopped
  • 1 tbsp. dried parsley
  • 1 tsp. Salt and pepper to taste
  • 30 oz. can white cannellini beans rinsed and drained (two 15-ounce cans)
  • 30 oz. can pinto beans rinsed and drained (two 15-ounce cans)
  • 1/2 cup cheddar Jack cheese for garnish, if desired
  • 1/2 cup sour cream for garnish
  • 1 green onion sliced, for garnish, if desired
  • 1 tbsp. cilantro chopped, for garnish

Instructions
 

  • Brown beef in skillet.
  • Use a hamburger chopper to break meat down in small pieces while frying.
  • Drain any grease.
  • Stir in Homemade Taco Seasoning and combine.
  • Place ground beef mixture, onions, garlic, tomatoes with green chilies, tomato sauce, parsley, salt and pepper in crockpot.
  • Cook on low heat in crockpot for approximately 3 hours.
  • Stir in beans and heat through about 10-15 minutes.
  • Ladle chili into bowls.
  • Garnish with cheese, sour cream and sliced green onions.

Notes

NOTE: To keep this recipe healthier, use two batches of my Homemade Taco Seasoning.
