Mango Poppyseed Dressing

This amazing salad dressing uses ataulfo mangos, Greek yogurt, honey, apple cider vinegar, avocado oil and poppyseeds. It's easy to make and a delicious gluten free, low calorie, healthy and clean-eating recipe. Serve over your favorite tossed salad.

Equipment

  • 1 blender
  • measuring cups
  • measuring spoons
  • 1 sharp knife to peel and dice mangos

Ingredients
  

  • 1/2 cup avocado oil
  • 2 cups plain Greek yogurt or Icelandic yogurt
  • 1/2 to 2/3 cup honey as desired
  • 1/4 cup apple cider vinegar
  • 2 mangos peeled and diced
  • 1 tbsp. poppyseeds

Instructions
 

  • Place all ingredients in a blender and puree until smooth – about 20 seconds.
  • Adjust honey and poppyseeds by adding more, if desired.
  • Drizzle dressing over top of individual salad plates.
  • Yield: About 1 quart.

NOTE: I served this salad dressing with Mango Berry Salad.
