This scrumptious cole slaw recipe is amped up in taste by the addition of apples, celery, almonds, craisins and carrots. It's great for summer picnics and for holiday menus. Gluten free.

  • 1 large serving bowl
  • 1 food processor
  • 1 sharp knife to cut fruit or vegetables
  • 1 vegetable peeler
  • 1 small bowl
  • 1 whisk
  • measuring spoons

Ingredients
  

Apple Cranberry Almond Cole Slaw:

  • 1 small cabbage shredded
  • 1 1/2 cups matchsticks carrots
  • 2 large gala apples sliced into matchsticks
  • 1/2 cup green onions sliced
  • 1 rib celery diced
  • 3/4 cup almonds sliced
  • 3/4 cup dried cranberries
  • 1/3 cup lemon juice to dip apples in

Greek Yogurt Salad Dressing:

  • 1 cup plain Icelandic yogurt or Greek yogurt
  • 1/3 cup honey or granulated sugar
  • 2 tbsp. apple cider vinegar
  • 1/2 tsp. Salt & pepper to taste
  • 1/4 tsp. celery seed

Instructions
 

Apple Cranberry Almond Cole Slaw:

  • Place cabbage, carrots, green onions, celery, almonds and cranberries in a large salad bowl.
  • Toss apples with lemon juice to prevent discoloration.
  • Drain on paper towels.
  • Add to other ingredients with dressing and stir to combine.
  • Refrigerate until ready to serve.

Greek Yogurt Salad Dressing:

  • Combine ingredients and whisk until smooth.
  • Pour over slaw ingredients and refrigerate until ready to serve.

Notes

NOTE: If you dip the apples in lemon juice you can prepare this salad a day in advance of serving without discoloration of apples.
