Broccoli Apple Salad is a delightful way to feature Broccoli Salad for family or company dinners. This scrumptious salad is great for holiday menus, potlucks, backyard barbecues or anytime you're getting together with company. Quick, easy, delicious and gluten free!

Equipment

  • 1 large serving bowl
  • 1 small mixing bowl
  • 1 wooden spoon
  • 1 whisk
  • measuring cups
  • measuring spoons
  • 1 sharp knife to cut vegetables
  • 1 nut chopper if nuts are not previously chopped

Ingredients
  

SALAD:

  • 4 cups broccoli florets about 2 medium heads
  • 1/2 cup carrots shredded
  • 1/4 cup red onion finely diced
  • 2 large Gala apples unpeeled and chopped (I use either Gala or Fuji apples)
  • 1/2 cup pecans coarsely chopped
  • 1/2 cup dried cranberries

YOGURT DRESSING:

  • 1 cup plain Greek yogurt or use Icelandic yogurt
  • 2 tbsp. lemon juice
  • 2 tbsp. granulated sugar or honey, (or more if a sweeter dressing is preferred)
  • 1/4 tsp. salt
  • 1/8 tsp. ground black pepper

Instructions
 

SALAD:

  • In a large bowl combine broccoli with all other salad ingredients.

YOGURT DRESSING:

  • Whisk dressing ingredients and pour over top of salad.
  • Toss salad with dressing to coat.
  • Chill until ready to serve.

Notes

NOTE: I increased the sugar from the original recipe but this is still not a sweet salad dressing. Add additional sugar or honey if you prefer a sweeter dressing.
