Creamy Ambrosia Salad is such a delight to the taste buds. This luscious salad is to die for! Great for holiday menus or backyard barbecues because it's so versatile and will fit in with just about any cuisine.

Equipment

  • 1 electric mixer
  • 1 mixing bowl
  • 1 wooden spoon
  • measuring cups
  • measuring spoons
  • 1 sharp knife to cut fruit, if necessary
  • 1 nut chopper if nuts are not finely diced

Ingredients
  

  • 20 oz. can pineapple chunks drained
  • 11 oz. can mandarin oranges drained
  • 2 rounded cups green seedless grapes
  • 2 rounded cups red seedless grapes
  • 1 cup coconut
  • 8 oz. pkg. cream cheese softened
  • 8 oz. sour cream
  • 2 tsp. real vanilla extract
  • 1/3 cup granulated sugar
  • 3-4 tbsp. pecans finely chopped
  • 1-3 tbsp. brown sugar (I usually use one tablespoon)
  • 10 maraschino cherries or sliced strawberries for garnish, if desired

Instructions
 

  • Combine cream cheese, sour cream, vanilla extract and granulated sugar with an electric mixer until smooth.
  • Stir in pineapple, oranges, grapes and coconut.
  • Sprinkle with chopped pecans, brown sugar and a little additional coconut.
  • Refrigerate until ready to serve.
