Peach Squares are the ultimate in a peach dessert. These scrumptious "Melt-in-your-mouth" brownies are filled with peaches and walnuts. Greek yogurt makes them super moist, so that they're mouthwatering and irresistible. Every bite will have you drooling. Terrific for potlucks, backyard barbecues or summer holiday fun.

Equipment

  • 1 9x13" glass baking dish
  • 1 large mixing bowl
  • 1 electric mixer
  • 1 large wooden spoon
  • measuring cups
  • measuring spoons
  • 1 sharp knife to cut, peel and pare peaches
  • 1 nut chopper to chop nuts if not previously chopped
  • 1 spatula

Ingredients
  

  • 2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
  • 2 cups brown sugar packed
  • 1 cup unsalted butter melted (2 sticks)
  • 1 cup walnuts or pecans, chopped
  • 2 tsp. cinnamon
  • 1 tsp. baking soda
  • 1/2 tsp. sea salt or Kosher salt
  • 1 cup plain Icelandic yogurt or Greek yogurt (or sour cream)
  • 2 tsp. vanilla extract
  • 1 large egg
  • 2 cups peaches peeled and finely chopped
  • 1/4 cup powdered sugar to sprinkle over top

Instructions
 

  • Preheat oven to 350°.
  • Melt butter in large mixing bowl; combine with flour and brown sugar.
  • Stir with a fork until well combined; mixture will resemble very fine crumbs.
  • Stir in nuts.
  • Place 2 ¾ cups of crumb mixture in bottom of a greased 9x13” baking dish.
  • Press down firmly.
  • Add remaining ingredients to remaining crumb mixture and stir to combine.
  • Spoon batter evenly over crumb base in dish.
  • Bake at 350° for 40-50 minutes or until a toothpick inserted in center comes out clean.
  • Cool completely before cutting.
  • Best if you let wait 24 hours before cutting.
  • Sprinkle with powdered sugar before cutting.
  • Store loosely covered.

Notes

NOTE: This is an extremely moist bar.
 
 
NOTE: You can also refrigerate the bars about 2-3 hours for easier cutting.
