Peach Ice Cream Cookies are absolutely sensational! These cookies include a secret ingredient: ice cream! Peaches make them irresistible. They're terrific for tailgating or block parties, family reunions and backyard barbecues. If you enjoy peaches, you'll love this dessert.
Add brown sugar and granulated sugar and mix with an electric mixer until combined.
Add ice cream, egg, vanilla, baking soda and salt and mix again until smooth.
Stir in flour and peaches.
Scoop balls of dough with a cookie scoop and place onto a cookie sheet or baking dish covered with wax paper.
Cover with plastic wrap and chill for at least 1 hour.
(You cannot omit this step).
Preheat oven to 350°F.
Place cookies approximately 2” apart on greased cookie sheets.
Bake for about 12-15 minutes, or until cookies start to turn golden brown around the edges.
Rotate cookie sheets on oven racks every six minutes of baking time.
Cool completely.

NOTE: Preparation time does not include time required to chill dough.NOTE: Use regular full-fat ice cream, not reduced fat, fat-free, or frozen yogurt.NOTE: You do not need to soften the ice cream before measuring.
