Bacon Stuffed Cherry Tomatoes will knock your socks off. This fabulous 5-ingredient appetizer is a great treat for tailgating parties or Super Bowl games. You won't be able to stop at one! They're labor intensive, but worth it! Gluten free.
Fry bacon in skillet until done; drain on paper towel-lined plate.
Once bacon is cool, break it up into very tiny pieces; set aside.
Combine first four ingredients in a small mixing bowl.
Cut off small portion of tomato bottom (not stem top.)
Scoop out insides with a vegetable peeler.
Heap stuffing into and up over top of the tomato.
Notes
NOTE: I found it easier to stuff the tomatoes with my fingers rather than a spoon. Have a wet paper towel handy to wipe your fingers before stuffing the next tomato. You may also have to wipe the outside of the tomatoes if you get the stuffing on the tomato peel.
