M&M Gooey Butter Cake Bars

These rich, decadent blondies have a cheesecake filling and M&M's for spectacular flavor. They're ooey, gooey and delicious. Terrific dessert for potlucks, tailgating parties or summer holiday fun like Memorial Day, Fourth of July and Labor Day.

  • 2 large mixing bowls
  • 1 electric mixer
  • 1 wooden spoon

Ingredients
  

CRUST:

  • 2 1/2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
  • 1 1/2 cups granulated sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 stick unsalted butter melted
  • 1 large egg
  • 1/4 cup 2% milk

TOPPING:

  • 8 oz. cream cheese softened
  • 1/4 cup unsalted butter melted
  • 2 large eggs
  • 1 tbsp. pure vanilla extract
  • 2 tbsp. lemon juice
  • 3 cups powdered sugar
  • 12.6 oz. bag milk chocolate M&Ms (about 1 1/2 cups)
  • 1/4 cup powdered sugar for garnish

Instructions
 

CRUST:

  • Preheat oven to 350°.
  • Combining flour, granulated sugar, baking powder and salt in a large bowl.
  • Add 1 stick (1/2 cup) melted butter and stir to combine.
  • Add the egg and milk and stir to fully incorporate.
  • The mixture should be crumbly and evenly moistened.
  • Evenly press the crust mixture into a greased 9x13” glass baking dish.
  • Pat down well so the ingredients adhere together well.
  • Set aside while the topping is prepared.

TOPPING:

  • Combine softened cream cheese, ¼ cup melted butter, 2 eggs, vanilla, lemon juice and 3 cups powdered sugar.
  • Mix with electric mixer until smooth.
  • Pour topping over the prepared crust and spread to completely cover the crust.
  • Sprinkle the M&M’s over the top of the filling.
  • Bake at 350° for 60-70 minutes or when a toothpick inserted in center comes out clean.
  • Cool completely.
  • Sprinkle heavily with powdered sugar, if desired.
  • Cut into bars.

Notes

NOTE: You may find these bars easier to cut if you refrigerate them a few hours first.
