Homemade Chicken Noodle Soup

This fabulous soup starts in the crockpot and is filled with fine egg noodles, chicken, carrots and celery and seasoned to perfection with salt, pepper, parsley, thyme and rosemary. It's the perfect comfort food for fall and great for what ails ya!

Equipment

  • 1 crockpot
  • 1 sharp knife to cut vegetables
  • 1 large stock pot with lid
  • 1 wooden spoon
  • measuring cups
  • measuring spoons
  • 1 soup ladle
  • 1 vegetable peeler

Ingredients
  

  • 1 whole chicken cooked
  • chicken stock rendered from cooking chicken
  • 2 carrots peeled and sliced
  • 2 ribs celery diced
  • 1 large onion diced
  • 1 tsp. dried thyme
  • 1 tsp. crushed rosemary
  • 2 tsp. salt
  • 1 tsp. ground black pepper
  • 12 cups water
  • 24 oz. pkg. No Yolks fine egg noodles or regular fine egg noodles (two 12-ounce packages)
  • 1 tsp. parsley minced, for garnish

Instructions
 

  • Place chicken in a large 7-quart crockpot and fill with water.
  • Salt and pepper the chicken and water generously.
  • Cook on low heat overnight – about 10 hours.
  • Allow chicken to cool an hour before deboning.
  • Place chicken stock and chicken meat in large stock pot.
  • Add carrots, celery, onion, seasonings and water and bring to a boil over high heat.
  • Reduce heat to simmer.
  • Simmer about 10-20 minutes, or until carrots are fork tender.
  • Add fine egg noodles and continue simmering about 6-8 minutes or until noodles are cooked.
  • Garnish with fresh parsley.

Notes

NOTE: You can also add a tablespoon of dried parsley when you add the seasonings, if desired.
 
 
NOTE: Preparation time does not include time required to slow cook the chicken, allow it to cool or debone the chicken.
 
 
NOTE: If you want to make the whole recipe in the crockpot, follow these steps:
 
 
1) debone chicken and skim broth really well.
2) add chicken pieces, veggies and seasonings into the crockpot and cook on high about an hour or until carrots are fork tender.
3) Add noodles and cook on high an additional 15-30 minutes or so, or until noodles are cooked through.
 
 
NOTE:  If you don't have time to cook off and debone a chicken, you can substitute canned chicken or shredded chicken from the deli and canned chicken broth.
