M&M Peanut Butter Cookies

M&M Peanut Butter Cookies are the best of both worlds! Delightful Peanut Butter Cookies are filled with M&M's for a scrumptious taste that will have you coming back for more. These are marvelous for tailgating parties, potlucks, backyard barbecues or Christmas Cookie Exchanges. Everyone will want the recipe!

Equipment

  • 2 18x26" cookie sheet pans
  • 1 large mixing bowl
  • 1 electric mixer
  • 1 wooden spoon
  • measuring cups
  • measuring spoons
  • 1 small bowl
  • 1 spatula

Ingredients
  

  • 1/4 cup coconut oil you can substitute Crisco shortening
  • 1/4 cup unsalted butter softened
  • 1/2 cup extra crunchy peanut butter
  • 1/2 cup brown sugar packed
  • 1 1/4 cups UNBLEACHED all-purpose flour (Bleached flour toughens baked goods)
  • 1/2 tsp. baking powder
  • 1/2 cup granulated sugar
  • 1 large egg
  • 3/4 tsp. baking soda
  • 1/4 tsp. sea salt
  • 2 cups M&M chocolate candies divided use
  • 1/3 cup granulated sugar to roll cookies in

Instructions
 

  • Set aside 1 cup M&M’s to decorate the tops of the cookies.
  • Mix thoroughly the coconut oil, butter, peanut butter, sugar, brown sugar, egg, baking soda, baking powder and salt with an electric mixer in a large mixing bowl.
  • Add flour and remaining cup of M&M’s and stir well to combine.
  • Cover and chill.
  • (You cannot omit this step).
  • Heat oven to 375°.
  • Shape dough into 1-inch balls.
  • Roll in 1/3 cup granulated sugar.
  • Place 2 inches apart on lightly greased baking sheets.
  • Top with 3-4 M&M’s on each cookie.
  • Bake 15-20 minutes or until set but not hard.
  • Rotate Cookie sheets on racks every six minutes during baking time.
  • Cool completely

Notes

NOTE: Time required to chill dough is not shown in preparation time.
 
NOTE: If you want a slightly flatter cookie, I recommend changing out the coconut oil or shortening for butter. Also omit the step for chilling the cookie dough.
 
NOTE: I actually chilled the cookie dough on cookie sheets (already rolled out) rather than chilling the dough before rolling into balls.
 
NOTE: You can also use creamy peanut butter.
