Raisin Spice Bars are so mouthwatering and drool-worthy. These lovely bar-type cookies are filled with cinnamon and nutmeg, pecans and raisins. Then they're iced with a scrumptious Lemon Buttercream Frosting. Great for holiday baking, but terrific any time of the year. If you enjoy raisins, they're a fantastic treat.

  • 1 wooden spoon
  • 2 medium mixing bowls
  • 1 whisk
  • measuring cups

  • 1 9x13" glass baking dish
  • 1 electric mixer
  • 1 spatula

Ingredients
  

RAISIN SPICE BARS:

  • 2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1 tsp. baking soda
  • 1/2 tsp. sea salt
  • 1/2 cup pecans or walnuts, finely diced (measure after chopping)
  • 1 cup raisins
  • 1 large egg beaten
  • 1 cup sour cream
  • 1 1/2 cups granulated sugar

LEMON BUTTERCREAM FROSTING:

  • 1/3 cup unsalted butter softened
  • 3 cups powdered sugar
  • 2 tbsp. lemon juice
  • 1/2 tsp. lemon peel grated
  • 1 tsp. vanilla extract
  • 2 tbsp. 2% milk or cream
  • 1/2 cup additional raisins for decoration
  • 1/4 cup pecans finely diced, to sprinkle on top of icing

Instructions
 

RAISIN SPICE BARS:

  • Combine flour, cinnamon, nutmeg, baking soda, salt, raisins and pecans in a mixing bowl and stir to combine and separate the raisins and the pecans.
  • Set aside.
  • Beat or whisk egg in a separate mixing bowl.
  • Add sugar and sour cream and beat again.
  • Combine flour mixture with egg mixture.
  • Pour into a greased 9x13” baking dish.
  • Bake at 375° for about 40 minutes until a toothpick inserted in center comes out clean.
  • Cool completely.
  • Frost with Lemon Butter Icing.
  • Cut into bars to serve.

LEMON BUTTERCREAM FROSTING:

  • Blend butter and sugar in a medium mixing bowl with electric mixer.
  • Add lemon juice and peel, vanilla and cream.
  • Beat until smooth and of spreading consistency.
  • Ice cooled squares.
  • Sprinkle lightly with finely diced pecans
  • Decorate tops of bars with raisins, if desired.

Notes

NOTE: This works better with freshly grated lemon peel rather than the stuff in the spice jars.
