Blueberry Vanilla Chip Oatmeal Cookies are the ultimate in an Oatmeal Cookie dessert. These lovely cookies include vanilla chips and dried blueberries for spectacular flavor. Equipment

  • 3 18x26" cookie sheet pans
  • 1 large mixing bowl
  • 1 electric mixer
  • 1 wooden spoon
  • 1 large cookie scoop
  • measuring cups
  • measuring spoons
  • 1 spatula

Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup light brown sugar packed
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tsp. vanilla extract
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 3 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
  • 1 1/2 cups old-fashioned oats
  • 12 oz. pkg. Premier white vanilla chips
  • 7 oz. pkg. dried blueberries (two 3.5-oz. pkgs.)

Instructions
 

  • In a medium bowl, cream butter, sugars, eggs, vanilla, baking powder, baking soda and salt with an electric mixer.
  • Stir in flour, oats, vanilla chips and dried blueberries with a wooden spoon until very well combined.
  • Roll into balls and place on greased cookie sheets.
  • Bake at 350° for 15-20 minutes or until done.
  • Rotate cookie sheets on racks every 6-7 minutes.
  • Cool completely.

Notes

NOTE: I was baking 5 cookie sheets at a time. Your oven may cook the cookies in considerably less time.
