White Chip Island Cookies

White Chip Island Cookies are sensational and so drool-worthy you'll be swooning from the first bite! These lovely cookies have a tropical island flare making these tasty sugar cookies absolutely divine. Cookies include white vanilla chips, coconut, and roasted macadamia nuts. Great for holiday baking, tailgating parties and especially sporting events like the Super Bowl or March Madness.

Equipment

  • 2 18x26" cookie sheet pans
  • 1 electric mixer
  • 1 large mixing bowl
  • 1 wooden spoon
  • measuring cups
  • measuring spoons
  • 1 nut chopper if macadamia nuts are not previously chopped
  • 1 spatula

Ingredients
  

  • 1 2/3 cup UNBLEACHED all-purpose flour bleached flour toughens baked goods
  • 3/4 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. sea salt
  • 3/4 cup unsalted butter softened
  • 3/4 cup light brown sugar packed
  • 1/3 cup granulated sugar
  • 1 tsp. vanilla extract
  • 1 large egg
  • 12 oz. pkg. premiere white vanilla chips
  • 1 cup coconut
  • 1 cup macadamia nuts dry roasted and chopped (measure after chopping)

Instructions
 

  • Mix sugars, egg, butter, vanilla, baking powder, baking soda and salt with an electric mixer until well combined.
  • Stir in flour, vanilla chips, coconut, and macadamia nuts with a wooden spoon until combined.
  • Roll into balls and place on very lightly sprayed cookie sheets.
  • Bake at 350° for 11-15 minutes or until done.
  • (My oven took 32 minutes!)
  • Rotate cookie sheet pans on oven racks every eight minutes of cooking time.
  • Cool completely.

Notes

NOTE: I was baking four racks in my oven with 24 cookies per rack. My cookies took 32 minutes to bake. I rotated the pans every eight minutes.
