Tropical Orange Creamsicle Bars

Spectacular bar-type cookie that's reminiscent of orange creamsicles. This one includes dried papaya, mango, and pineapple along with coconut and vanilla chips. Then the cookie is iced with orangesicle frosting and sprinkled with toasted coconut. Great recipe for tailgating or holiday baking.

Equipment

  • 1 9x13" glass baking dish
  • 1 large mixing bowl
  • 1 whisk
  • 1 wooden spoon
  • measuring cups
  • measuring spoons
  • 1 sharp knife to dice fruit
  • 1 small cookie sheet to toast coconut
  • 1 spatula

Ingredients
  

BARS:

  • 1 box Pillsbury orangesicle premium cookie mix
  • 1 stick unsalted butter softened
  • 1 large egg
  • 1/3 cup water
  • 1/2 cup dried pineapple finely diced
  • 1/2 cup dried mango finely diced
  • 1/2 cup dried papaya finely diced
  • 1 cup coconut
  • 1 cup vanilla chips

ORANGE CREAMSICLE FROSTING:

  • 16 oz. can Pillsbury creamy supreme orangesicle frosting
  • 1/2 cup coconut toasted

Instructions
 

BARS:

  • Mix cookie mix, butter, egg and water with a whisk to combine.
  • Add dried fruits, coconut, vanilla chips and orange peel and stir to combine.
  • Spray a 9x13” glass baking dish with cooking spray.
  • Spread cookie mix into prepared pan.
  • Bake at 350° approximately 30-40 minutes or until a toothpick inserted in center comes out clean.
  • Allow bars to cool completely.
  • Frost with Tropical Orangesicle Icing.

ORANGE CREAMSICLE FROSTING:

  • Toast coconut in 350° oven or toaster oven for about 5-10 minutes.
  • Set aside.
  • Spread canned frosting on cooled bars.
  • Sprinkle with toasted coconut for garnish.
  • Allow icing to set at least 15 minutes before cutting into bars.
