1 fresh pineapple 1 pint strawberries sliced 2 large bananas sliced 2 kiwis peeled and sliced 1 mango sliced 2 champagne or ataulfo mangos sliced or chunked 1/2 cup red grapes 1 star fruit cut in 1/8” slices 1/3 cup honey 2 limes juiced 1/2 tsp. cinnamon 1/4 cup coconut flakes 1 bunch fresh mint optional
Cut pineapple in half lengthwise.
Carve out the insides from pineapple halves.
Save halves to serve salad in.
Dice pineapple, discarding the core.
Mix pineapple, strawberries, bananas, kiwis, grapes, mangos and half the star-fruit together in a large mixing bowl.
In a small bowl, combine honey, lime juice and cinnamon with a whisk.
Pour over fruit and toss.
Place in pineapple shell, sprinkle with coconut and garnish with mint leaves and additional star-fruit slices.
