Texas BBQ Ribs

Texas BBQ Ribs are succulent, mouthwatering and totally sumptuous! These delectable old-fashioned Texas barbecue-style ribs are a family favorite. The ribs are baked in the oven with sliced lemons and diced onions then slathered with a tasty barbecue sauce. Fantastic dish for company or holiday dinners like Mother's Day or Father's Day. Gluten free.

Equipment

  • 1 18x26" cookie sheet pan
  • 1 sharp knife to cut onions and lemons
  • 1 medium sauce pan
  • measuring cups
  • measuring spoons
  • 1 wooden spoon
  • 1 small mixing bowl
  • 1 whisk

Ingredients
  

RIBS:

  • 3 lbs. spare ribs usually pork but can use beef ribs
  • 1/2 cup onion chopped
  • 2 lemons or lemon juice, as needed

TEXAS BARBECUE SAUCE:

  • 2 tbsp. brown sugar packed
  • 1/4 tsp. chili powder
  • 1 tsp. salt
  • 2 tbsp. Worcestershire sauce (Lea & Perrins makes a GF sauce)
  • 1 cup tomato juice
  • 1/2 cup water
  • 1 tsp. paprika
  • 1 tsp. dry mustard
  • 1/8 tsp. ground black pepper
  • 1/4 cup vinegar
  • 1/4 cup catsup (purchase GF ketchup)

Instructions
 

RIBS:

  • Place ribs in a large greased or oiled pan.
  • Place one lemon slice over each rib.
  • Sprinkle chopped onions over top of all.
  • Bake for about 30 minutes at 350°.
  • If there is a lot of grease, pour off.
  • Pour BBQ sauce over top of ribs and bake an additional 1 ½ to 2 hours.
  • (I usually bake about 2 ½ hours longer).
  • Baste with sauce every 15 minutes.
  • If sauce thickens too much add a little hot water, to prevent ribs from browning too much.
  • Cover with foil the last 30 minutes of baking, if ribs are getting too dark.

TEXAS BARBECUE SAUCE:

  • Mix ingredients in a small mixing bowl with a whisk.
  • Transfer to a medium sauce pan.
  • Simmer for 15 minutes on top of stove over low to medium heat.

Notes

NOTE: My mom never used tomato juice, just a mixture of more catsup and water. Although I have done it both ways.
 
NOTE: You can also sprinkle about a teaspoon of lemon juice over each rib if you don’t have lemons. Either way works fine.
 
NOTE: Check your condiments to make sure your catsup and Worcestershire sauce are gluten free if you want to ensure this recipe truly is gluten free.
 
NOTE: This recipe doesn't work that great on a cookie sheet because of too much splatter. If you want easier clean up, consider placing parchment paper on the bottom of your baking dish and spray with cooking spray.
 
NOTE: All ovens vary. I have had these ribs cook completely in less than two hours before. Yet sometimes the ribs have taken over three hours. It depends upon how meaty the ribs, whether they're bone-in or boneless, and oven temperature. Adjust time accordingly.
