White Chocolate Cherry Coconut Cookies are the ultimate in holiday baking. These festive cookies are filled with white chocolate chips, dried cherries and coconut. 1 cup unsalted butter softened 1 cup granulated sugar 1 cup light brown sugar packed 2 large eggs 2 tsp. vanilla extract 3 1/2 to 4 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods 1 tsp. baking soda 2 tsp. hot water 1/2 tsp. salt 2 cups white chocolate chips 1 cup coconut 6 oz. dried cherries
Preheat oven to 350°.
Dissolve baking soda in hot water.
Set aside.
Cream together the butter, white sugar, brown sugar, eggs, vanilla, salt and baking soda mixture with an electric mixer.
Stir in flour, white chocolate chips, dried cherries and coconut with a wooden spoon until ingredients are very well combined.
Roll into balls and place on cookie sheets that have been sprayed with cooking spray.
Bake 15-17 minutes at 350° or until done.
Rotate cookie sheet pans on oven racks every seven minutes of baking time.
Cool completely.
NOTE: I accidentally over-softened the butter so I ended up using extra flour to compensate. I recommend using about 3 1/2 cups of flour normally.
