Peach Cobbler Bars

Peach Cobbler Bars are outrageously good. These lovely bars have a lovely lemony fragrance added to the crust and the peach cobbler filling. They're a gooey dessert bar that's fabulous and reminiscent of eating peach cobbler but in cookie form! Marvelous for backyard barbecues, Summer Family Reunions, potlucks and tailgating parties. Every bite will have you wanting so much more!

Equipment

  • 1 9x13" glass baking dish
  • 2 mixing bowls
  • 1 wooden spoon
  • 1 sharp knife to cut and pare peaches
  • measuring cups
  • measuring spoons
  • 1 pastry blender
  • 1 spatula

Ingredients
  

  • 1 1/2 cups granulated sugar divided use
  • 1 tsp. baking powder
  • 3 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
  • 1/2 tsp. salt
  • 2 large egg yolks
  • 2 sticks unsalted butter chilled (1 cup)
  • 3/4 tbsp. lemon zest
  • 1 1/2 tbsp. lemon juice divided use
  • 5 cups peaches peeled and finely diced
  • 4 tbsp. cornstarch
  • 1 tsp. cinnamon

Instructions
 

  • Combine 1 cup granulated sugar, baking powder, flour and salt in a mixing bowl.
  • Add yolks, lemon zest and ¾ tbsp. lemon juice.
  • Cut in butter with a pastry blender until coarse crumbs form.
  • Press half of the mixture into the bottom of a greased 9x13” baking dish.
  • Place peaches, remaining half cup sugar, cornstarch, cinnamon, and ¾ tbsp. lemon juice in a small bowl.
  • Stir to combine.
  • Allow peaches to sit for 5 minutes.
  • Layer peaches over top of crust layer.
  • Sprinkle remaining crust mixture over top of peaches.
  • Bake at 350° for 50-60 minutes or until golden.
  • Cool completely.
  • Cut into bars.

Notes

NOTE: If you are unable to locate fresh peaches you can substitute frozen or canned peaches, but you will need to pat them dry before using so they don't add too much additional moisture to the recipe.
