Peach Bars with Caramel Creme Frosting will rock your world! This rich and decadent dessert is made with peaches and walnuts and iced with a caramel-marshmallow frosting. These cake-like bars are scrumptious and addictive. Terrific for tailgating parties, potlucks or company dinners.

1 sharp knife to cut and pare peaches

PEACH BARS: 2 1/2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods 1 1/2 cups granulated sugar 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. sea salt 1 1/2 tsp. cinnamon 1/2 tsp. nutmeg 1 stick unsalted butter softened (1/2 cup) 2 large eggs 3 cups peaches peeled and finely diced 1/2 cup walnuts chopped (measure after chopping) CARAMEL CREME FROSTING: 1/2 cup unsalted butter (1 stick) 1 cup light brown sugar firmly packed 1/4 cup heavy whipping cream half-and-half or evaporated milk 1 cup miniature marshmallows 2 cups powdered sugar 1/2 tsp. vanilla extract
PEACH BARS: Mix sugar, baking powder, baking soda, salt, cinnamon, nutmeg, butter and eggs in a large mixing bowl.
Mix with an electric mixer until well combined.
Stir in flour, peaches and walnuts with a wooden spoon until ingredients are well mixed.
Grease a 9x13” baking dish.
Spread ingredients into dish and level with a knife.
Bake at 350° for 45-55 minutes or until a toothpick inserted in the center comes out clean.
Cool.
Frost with Caramel Crème Frosting.
CARAMEL CREME FROSTING: Melt butter in medium saucepan.
Add brown sugar and cream; mix well.
Heat to boiling.
Cook a few minutes stirring constantly.
Turn heat to low.
Add marshmallows and stir until they melt.
Remove from heat.
Remove caramel mixture to mixing bowl.
Add powdered sugar and vanilla.
Beat with an electric mixer until well mixed.
Spread on cooled cake.
Allow icing to set at least 15 minutes before cutting into bars.
NOTE: This dessert is easier to cut if you refrigerate a few hours first.
