Peach Bars with Caramel Creme Frosting will rock your world! This rich and decadent dessert is made with peaches and walnuts and iced with a caramel-marshmallow frosting. These cake-like bars are scrumptious and addictive. Terrific for tailgating parties, potlucks or company dinners.

Equipment

  • 1 9x13" glass baking dish
  • 1 large mixing bowl
  • 1 electric mixer
  • 2 wooden spoons
  • 1 sharp knife to cut and pare peaches
  • measuring cups
  • measuring spoons
  • 1 medium sauce pan
  • 1 spatula
  • 1 regular knife or icing spreader

Ingredients
  

PEACH BARS:

  • 2 1/2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
  • 1 1/2 cups granulated sugar
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. sea salt
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1 stick unsalted butter softened (1/2 cup)
  • 2 large eggs
  • 3 cups peaches peeled and finely diced
  • 1/2 cup walnuts chopped (measure after chopping)

CARAMEL CREME FROSTING:

  • 1/2 cup unsalted butter (1 stick)
  • 1 cup light brown sugar firmly packed
  • 1/4 cup heavy whipping cream half-and-half or evaporated milk
  • 1 cup miniature marshmallows
  • 2 cups powdered sugar
  • 1/2 tsp. vanilla extract

Instructions
 

PEACH BARS:

  • Mix sugar, baking powder, baking soda, salt, cinnamon, nutmeg, butter and eggs in a large mixing bowl.
  • Mix with an electric mixer until well combined.
  • Stir in flour, peaches and walnuts with a wooden spoon until ingredients are well mixed.
  • Grease a 9x13” baking dish.
  • Spread ingredients into dish and level with a knife.
  • Bake at 350° for 45-55 minutes or until a toothpick inserted in the center comes out clean.
  • Cool.
  • Frost with Caramel Crème Frosting.

CARAMEL CREME FROSTING:

  • Melt butter in medium saucepan.
  • Add brown sugar and cream; mix well.
  • Heat to boiling.
  • Cook a few minutes stirring constantly.
  • Turn heat to low.
  • Add marshmallows and stir until they melt.
  • Remove from heat.
  • Remove caramel mixture to mixing bowl.
  • Add powdered sugar and vanilla.
  • Beat with an electric mixer until well mixed.
  • Spread on cooled cake.
  • Allow icing to set at least 15 minutes before cutting into bars.

Notes

NOTE: This dessert is easier to cut if you refrigerate a few hours first.
