1 stick unsalted butter melted 1 cup UNBLEACHED all-purpose flour bleached flour toughens baked goods 2 cups granulated sugar divided use 1 tbsp. baking powder 1/8 tsp. salt 1 cup 2% milk 4 cups fresh peach slices 1 tbsp. lemon juice 1/2 tbsp. cinnamon
Melt butter in 9x13” baking dish.
Combine flour, 1 cup sugar, baking powder and salt; add milk, stirring just until ingredients are moistened.
Don’t overmix.
Pour batter over the butter in baking dish. (DO NOT STIR).
Bring remaining 1 cup of sugar, the cinnamon, lemon juice and peaches to a boil over medium-high heat, stirring constantly.
Boil and stir for about 3 minutes until peaches soften.
Pour peach mixture over top of flour mixture in baking dish. (DO NOT STIR).
Bake at 350° for about 40-45 minutes or until set and golden brown.
Serve cobbler warm with ice cream or cold, as you prefer.
NOTE: This recipe can easily be adapted for other fruit besides peaches.
