Polynesian Chicken is a fantastic 30-minute entree that is mouthwatering and irresistible. This tasty chicken stir-fry dish has a Polynesian flair using pineapple and Caribbean sauce. It's healthy, gluten free and dairy free. It's the perfect week night dinner when you're short on time!
1cupDella Global Kitchen Mango Habanero Caribbean Sauce(or substitute pineapple-mango chutney, salsa or sauce)
2tbsp.cornstarch
2tbsp.water
3cupshot, cooked rice
Instructions
Cut chicken in chunks.
Heat soy sauce and oils in skillet.
Lightly brown chicken a few minutes on each side.
Add vegetables and crisp fry about 1-2 minutes.
Stir in pineapple tidbits with juice and Caribbean sauce.
Cover and cook for 5 minutes over low to medium heat.
Meanwhile, combine cornstarch with water.
Uncover chicken, and add cornstarch mixture.
Continue to cook approximately 10 minutes or until sauce thickens.
Serve over hot, cooked rice.
Notes
NOTE: Any kind of mango/pineapple sauce, salsa or chutney is good. I used one that included habanero peppers so it had some kick to it.NOTE: To keep this recipe gluten free, make sure your mango/pineapple sauce is gluten free.
