Strawberry Blueberry Avocado Salad with Strawberry Poppyseed Vinaigrette

Lovely, refreshing summer salad with strawberries, blueberries, avocados, almonds, feta cheese and lemon zest. This recipe is served with a homemade Strawberry Poppyseed Vinaigrette and is gluten free. It's terrific for company dinners.

Equipment

  • 1 large salad bowl
  • 1 blender
  • 1 sharp knife to cut vegetables and fruit
  • measuring cups
  • measuring spoons

Ingredients
  

SALAD:

  • 3 bags butter bliss lettuce
  • 1 lb. strawberries sliced
  • 1 cup blueberries
  • 1 cup Feta cheese
  • 1/2 cup almonds sliced
  • 2 avocados sliced
  • 1-2 tbsp. fresh lemon zest as desired

STRAWBERRY POPPYSEED VINAIGRETTE:

  • 1/2 cup avocado oil
  • 1/4 cup savory fig balsamic vinegar or apple cider vinegar or red wine vinegar
  • 1/2 to 3/4 cup honey or more, if desired (You may prefer sugar)
  • 1/2 tsp. sea salt
  • 2 green onions diced
  • 1 lemon juice only
  • 1 tbsp. poppy seeds
  • 1/2 tsp. spicy brown mustard
  • 1/3 to 1/2 lb. strawberries halved

Instructions
 

SALAD:

  • Layer ingredients in order listed omitting avocados until right before serving.
  • Refrigerate until ready to serve.
  • To serve: Add avocado slices and toss salad ingredients and place on plate.
  • Drizzle Strawberry Vinaigrette over top of salad.

STRAWBERRY POPPYSEED VINAIGRETTE:

  • Process all ingredients in a blender until well mixed.
  • Store in refrigerator until needed.
  • Serve over top of salad.

Notes

NOTE: Add more honey if you prefer a sweeter dressing. Add more green onions and spicy brown mustard if you prefer a more pungent salad dressing.
 
 
NOTE: Grape seed oil has a strong flavor. You may prefer a milder dressing made with avocado oil or sunflower seed oil. Avocado oil wasn't readily available when I initially made this recipe. It would be my recommended choice for the oil ingredients in this recipe. It does not leave the strong aftertaste that olive oil has.
 
 
NOTE: Balsamic vinegar is a strongly flavored vinegar. You may prefer to substitute apple cider vinegar or red wine vinegar.
 
 
NOTE: If you prefer a sweeter dressing, use sugar rather than honey.
