Cheese Potatoes will knock your socks off. This tempting and delicious side dish is super quick and easy to make. Though the recipe is simple it provides splendid taste. It's terrific for family, company or holiday dinners. Everyone will want seconds! Gluten Free.

Equipment

  • 1 1 1/2 quart baking dish with lid
  • 1 potato masher
  • measuring cups
  • measuring spoons
  • 1 sharp knife to cut onion
  • 1 mixing bowl
  • 1 wooden spoon
  • aluminum foil

Ingredients
  

  • 5 baking potatoes peeled and boiled, or baked and peeled
  • 1 small onion diced
  • 1/2 cup unsalted butter melted (1 stick)
  • 1 cup sharp Cheddar cheese grated
  • 1 cup sour cream
  • 1 tsp. salt
  • 3/4 tsp. ground black pepper

Instructions
 

  • Boil potatoes.
  • Cool. Dice small; put in a mixing bowl.
  • I used a potato masher one time through.
  • Don’t mash the potatoes.
  • Grate, or dice very finely, one onion and add to diced potatoes in mixing bowl.
  • Add butter, Cheddar cheese, sour cream and salt and pepper.
  • Stir gently to combine ingredients.
  • Pour into greased 1 1/2 –qt. casserole dish.
  • Cover with foil or glass lid.
  • Bake for 30 minutes at 350°.
  • Remove foil or lid and bake an additional 15 minutes.
