Double Date Delight Oatmeal Cookies

These fantastic oatmeal cookies are loaded with cinnamon and dates. They truly are doubly delicious. Great for tailgating parties and holiday baking, especially Christmas Cookie Exchanges. Better than Oatmeal Raisin cookies!

Equipment

  • 2 18x26" cookie sheet pans
  • 1 large mixing bowl
  • 1 electric mixer
  • 1 wooden spoon
  • measuring cups
  • measuring spoons
  • 1 large cookie scoop
  • 1 spatula

Ingredients
  

  • 2 sticks unsalted butter softened
  • 1 cup light brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp. vanilla extract
  • 1 tsp. cinnamon
  • 1 tsp. baking soda
  • 1 1/2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
  • 3 cups old-fashioned oatmeal
  • 16 oz. pkg. chopped dates (two 8-ounce packages)

Instructions
 

  • Mix butter, sugars, eggs, vanilla, cinnamon and baking soda in a mixing bowl with an electric mixer until well combined.
  • Stir in flour, oatmeal and dates with a wooden spoon and stir well to combine.
  • With a ¼ cup cookie scoop, scoop dough and place on cookie sheets that have been sprayed with cooking spray.
  • Bake at 350° about 20-25 minutes or until golden brown.
  • Rotate cookie sheets on racks every 6-8 minutes of baking time.
  • Cool completely.

Notes

NOTE: I made really large cookies so they took 25 minutes to bake! The original recipe calls for much smaller cookies and for these to bake about 10-12 minutes. Depending on the size of your cookie, bake until done!
