Crunchy Peanut Butter Cookies

These mouthwatering Peanut Butter Cookies use crunchy peanut butter for a nutty, chunky texture that's absolutely heavenly and one your family is sure to enjoy. Marvelous for tailgating parties, potlucks and Christmas Cookie Exchanges.

1 cup light brown sugar packed 1 cup granulated sugar 1 cup extra crunchy peanut butter 3/4 cup butter I use unsalted butter 2 large eggs 1 tsp. vanilla extract 1/4 tsp. salt I use sea salt 1 tsp. baking soda 2 tbsp. hot water 2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
Mix brown sugar, sugar, peanut butter, butter and eggs in a mixing bowl with an electric mixer until smooth.
Add vanilla, salt, baking soda and hot water and mix again until well blended.
Stir in flour with a wooden spoon until well-combined.
Drop with a large cookie scoop or large tablespoon onto cookie sheets that have been sprayed with cooking spray.
Bake at 375° about 12-15 minutes or until done.
Rotate cookie sheets on oven racks after 7 minutes of baking time.
Cool completely.
NOTE: I made whopper sized cookies so these took longer to bake. If you're making smaller cookies you will need to adjust the length of baking time.
