Raspberry Lemonade Bars

Luscious 6-ingredient recipe with lemonade cookie mix crust layer, a raspberry jam layer, a cheesecake layer, and then a streusel topping layer made from the lemonade cookie mix. These bars absolutely irresistible and perfect for holidays like Christmas or Valentine's Day.

17.5 oz. pkg. Pillsbury Pink Lemonade Flavored Cookie Mix 1/2 cup unsalted butter softened 3/4 to 1 cup seedless red raspberry jam 8 oz. pkg. cream cheese softened 1/4 cup granulated sugar 1 large egg
Heat oven to 350°.
Spray a 9x13” baking dish with cooking spray.
Combine cookie mix and butter in large bowl with a pastry blender until crumbly.
Reserve ¾ cup crumb mixture for topping.
Press remaining mixture into the bottom of the prepared baking dish.
Bake crust layer 10 minutes at 350°.
While crust layer is baking beat cream cheese, granulated sugar and egg with an electric mixer until smooth.
Set aside.
Remove dish from oven.
Spread red raspberry jam over partially baked crust.
Spoon cream cheese mixture over top of jam layer to cover.
Sprinkle with reserved crumb mixture.
Bake 30-35 minutes longer or until toothpick inserted in center comes out clean.
Cool completely.
Chill 1 hour before cutting into bars.
