Hawaiian Pizza Cups

Hawaiian Pizza Cups are the ultimate appetizer for any party or potluck. This amazing appetizer uses only 6 ingredients including ham, pineapple and green bell pepper. Because they start with refrigerated biscuits they are incredibly quick and easy to whip up. This is the perfect finger food for tailgating, New Year's Eve or Super Bowl parties. These miniature pizzas are the hit of every party!

Equipment

  • 2 12-tin regular muffin pans
  • measuring spoons
  • 1 sharp knife to cut vegetables
  • 1 large cookie sheet or tray, to serve
  • measuring cups
  • 1 Rolling Pin
  • 1 plate

Ingredients
  

  • 2 cans refrigerated biscuits 10 biscuits each can
  • 2 cups spaghetti sauce your favorite flavor
  • 1 cup ham diced, or more, if desired
  • 2/3 cup pineapple diced, drained well, or more, if desired
  • 1/2 cup green bell pepper finely diced
  • 8 oz. pkg. Mozzarella cheese shredded

Instructions
 

  • Spray 20 muffin tins with cooking spray.
  • Roll biscuit dough out on the bottom of a plate; spread biscuits into the muffin tins as well as possible to cover the bottom and sides.
  • Spoon one level tablespoon spaghetti sauce into each biscuit.
  • Place about eight to ten pieces of ham on top of sauce.
  • Drain pineapple well; place about six pieces of pineapple on top of the ham.
  • Sprinkle eight to ten pieces green bell pepper over top of pineapple.
  • Sprinkle mozzarella cheese over top of each muffin tin; tuck the cheese into the muffin tin and remove any from the top of the pan.
  • Bake at 400° about 15-20 minutes until cheese melts and biscuits are lightly browned.
  • Do not overbake.
  • Allow muffins to cool in muffin pan about five minutes before removing pizza cups from muffin tins.
  • Gently remove pizza cups with a butter knife and place on large cookie sheets to serve.

Notes

NOTE: I found that one level tablespoon of sauce was just about right. Too much more and the pizza cups will overflow.
 
NOTE: If the pizza cups sit out for awhile, they can each be microwaved for a few seconds to reheat.
 
NOTE: Make sure you brush all of the mozzarella cheese into the tins and don't leave any on top of the pan before baking. This will make for easier removal of the pizza cups from the pans later.
