Cookies 'n Creme Brownies

The lovely brownie layer is filled with Oreo cookie pieces and half a can of vanilla buttercream frosting! Then the brownie layer is covered with a can and a half of vanilla buttercream frosting with more Oreo cookies crumbled over the top. Spectacular is putting it mildly. This brownie rocks!

Equipment

  • 1 9x13" glass baking dish
  • 1 large mixing bowl
  • 1 wooden spoon
  • 1 electric mixer
  • measuring cups
  • measuring spoons
  • 1 spatula

Ingredients
  

  • 1 box fudge brownie mix
  • 2 large eggs
  • 1/4 cup water
  • 3/4 cup canola oil
  • 2 cups Double Stuff Oreo cookie crumbs divided use
  • 2 containers vanilla frosting or chocolate frosting (divided use)

Instructions
 

  • Grease or spray 9x13” baking dish. Set aside.
  • Mix brownie mix, eggs, water and oil in a mixing bowl.
  • Stir in 1 cup Double Stuff Oreo crumbs and ½ container vanilla or chocolate frosting (2/3 cup).
  • Spread into pan and smooth the top.
  • Bake at 350° approximately 21-23 minutes until a toothpick inserted in center comes out clean.
  • Cool completely.
  • Spread 1 ½ cans remaining frosting over top of brownies.
  • Sprinkle reserved 1 cup Double Stuff Oreo crumbs over top.
  • Garnish with more Oreo cookies if desired.

Notes

NOTE: The original recipe calls for one can of frosting, of which you use half in the brownie layer. This does not leave enough frosting to frost the entire top of the brownie layer. You need about 1 ½ cans to do this entirely, although I went ahead and used ½ can in the brownie batter and 1 ½ cans on top.
