Pumpkin Chocolate Chip Cookies

These amazing cookies are delicately flavored with cinnamon and pumpkin pie spice which don't overwhelm the cookie with flavor. They're chocked full of chocolate chips so they are incredibly rich and decadent as well! Great for holiday baking.

Equipment

  • 2 18x26" cookie sheet pans
  • 1 large mixing bowl
  • 1 wooden spoon
  • 1 electric mixer
  • measuring spoons
  • measuring cups
  • 1 spatula
  • 2 wire cooling racks

Ingredients
  

  • 1 cup unsalted butter softened, (2 sticks)
  • 1/2 cup light brown sugar packed
  • 1 cup granulated sugar
  • 2 tsp. vanilla extract
  • 1 cup pumpkin puree (not pumpkin pie mix)
  • 3 1/2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
  • 1/2 tsp. sea salt
  • 3/4 tsp. baking powder
  • 3/4 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 3/4 tsp. pumpkin pie spice
  • 1 large egg
  • 2 cups semi-sweet chocolate chips
  • 1 cup additional chocolate chips to press into the top of the cookie after baking about 5-6 for each cookie (about 1 cup)

Instructions
 

  • Preheat oven to 350°.
  • Mix butter, sugars, vanilla, pumpkin, salt, baking powder, baking soda, cinnamon, pumpkin pie spice and egg with an electric mixer until smooth.
  • Stir in flour and chocolate chips until thoroughly mixed.
  • Roll the dough into balls and place on cookie sheets that have been sprayed with cooking spray.
  • Press 5-6 chocolate chips in the top of each cookie.
  • Bake the cookies for 15-20 minutes or until set.
  • Rotate cookie sheets on oven racks every 7 minutes of baking time.
  • Allow the cookies to cool for at least 10 minutes on the cookie sheets before transferring to a wire rack.

Notes

NOTE: I had to keep my hands moist while rolling dough into balls.
 
 
 
NOTE: I was baking 2 racks at a time with 24 cookies per rack. My cookies took about 18-19 minutes to bake.
 
 
 
NOTE: When making large batches, I found it necessary to add an additional one-quarter cup of flour per batch to get the right consistency.
 
 
 
NOTE: Rather than rolling the cookies, you can also drop the cookie dough by heaping tablespoonfuls onto cookie sheets and then press the chocolate chips into the cookie batter.
