Caramel Bars (a.k.a. Turtle Bars)

Rich and decadent bar that tastes like eating Turtle Candies! The crust and topping are an oatmeal streusel layer. Then there's a layer of melted caramels, topped with chocolate chips and pecans. Ooey, gooey, delicious!

Equipment

  • 1 9x13" glass baking dish
  • 1 small sauce pan
  • 1 wooden spoon
  • 1 mixing bowl
  • measuring cups
  • measuring spoons
  • 1 spatula
  • 1 nut chopper if nuts are not previously chopped

Ingredients
  

  • 32 caramels unwrapped
  • 3 tbsp. whipping cream no substitutes
  • 1 cup oatmeal
  • 1 1/2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
  • 1/2 tsp. sea salt or kosher salt
  • 3 tbsp. real unsalted butter no substitutes
  • 3/4 cup real unsalted butter softened, no substitutes
  • 1 tsp. baking soda
  • 3/4 cup light brown sugar packed
  • 1/2 cup pecans chopped, (pecans are best but walnuts can be used) (measure after chopping)
  • 1 cup chocolate chips 1/2 bag

Instructions
 

  • Melt caramels, 3 tbsp. butter and whipping cream in a small sauce pan; set aside.
  • Mix together ¾ cup butter, oatmeal, soda, flour, brown sugar and salt in a large mixing bowl.
  • Put ¾ mixture into greased 9x13” pan.
  • Press down.
  • Bake 5 minutes in 325° oven.
  • Pour caramel mixture over top. (This is VERY HARD to work with and spread, because the mixture is hot and somewhat sticks to the crust if you are not careful.)
  • Do your best to spread as evenly as possible.
  • Sprinkle chocolate chips evenly over caramel topping and then add chopped pecans.
  • Sprinkle remaining ¼ oatmeal mixture over all.
  • Bake at 325° for 15 minutes.
  • Cool completely before cutting into bars.

Notes

NOTE: These are delicious and well worth the effort.
