Balsamic Yellow Squash Bake

Savory gluten free and vegan casserole with yellow squash, leeks, red onions, red bell peppers and garlic. It's seasoned with parsley, basil and thyme, balsamic vinegar and olive oil. Equipment

  • 1 9x13" glass baking dish
  • 1 sharp knife to cut vegetables
  • measuring cups
  • measuring spoons
  • aluminum foil

Ingredients
  

  • 5 medium yellow squash sliced
  • 1 leek green top removed, thoroughly washed and sliced
  • 1/3 cup red onion diced
  • 1/2 red bell pepper diced
  • 2 cloves garlic finely minced
  • 1/4 cup fresh parsley minced
  • 1 heaping tablespoon fresh chopped basil
  • 1 heaping tablespoon fresh thyme
  • 1/4 to 1/3 cup olive oil
  • 1-2 tbsp. balsamic vinegar
  • 1 tsp. Salt and pepper to taste

Instructions
 

  • Spray a 9x13” glass baking dish with cooking spray.
  • Layer ingredients in dish in order listed.
  • Cover with foil and bake at 350 about 30-40 minutes or until cooked through.
