Guacamole, Roasted Red Pepper and Swiss Sandwiches

Guacamole, Roasted Red Pepper and Swiss Sandwiches are heavenly. This fabulous grilled cheese sandwich uses homemade guacamole, roasted red peppers and Swiss cheese. Every bite will have you drooling! This satisfying sandwich is hearty and filling, but so addictive you'll want to eat it often. Terrific for Meatless Mondays too.
1 sharp knife to cut roasted red peppers, if necessary
measuring cups
Ingredients
1/2 cupchunky homemade guacamole
1/8tsp.ground black pepperto taste
2slicesSwiss cheeseor more if desired
1roasted red pepper slices
2slicesbreador homemade Parmesan Pine Nut Bread
1tbsp.butterfor frying
Instructions
Melt a tablespoon or so of butter in a cast-iron skillet or other skillet over medium heat.
Lay bread pieces on counter.
Place Swiss cheese over top of each piece.
Sprinkle with pepper.
Spoon guacamole on one piece of the bread.
Top with drained, roasted red pepper slices.
Invert remaining piece of bread so cheese is on top of the roasted red pepper.
Grill sandwich in skillet about 5-10 minutes, covered, before flipping sandwich over and grilling the other side.
Do not use high heat or bread will scorch.
Notes
NOTE: If the cheese hasn’t melted to your satisfaction, place sandwich on a microwavable plate and microwave 15 seconds or so until cheese melts adequately.NOTE: You can locate my recipe for Chunky Homemade Guacamole, here.NOTE: A sturdy Artisan type bread is preferred in the recipe. Regular white bread is too flimsy.
