Creamy Cilantro Lime Dressing

Excellent Tex-Mex dressing uses a batch of fresh cilantro, juice of one lime, Greek yogurt, garlic, olive oil, white vinegar and a little honey and salt. Great served with any Tex-Mex salad. Healthy, clean eating and gluten free.

1 bunch cilantro washed 1/2 cup plain Greek yogurt or Icelandic yogurt 3 tbsp. honey or more if desired 1 lime juice only 2 large cloves garlic minced 1/4 cup olive oil 1 1/2 tsp. white vinegar 1/2 tsp. sea salt
Puree all ingredients in a blender or food processor until smooth.
Taste and adjust seasonings if necessary.
Serve with Southwestern Chopped Salad.
Makes about 1 ½ cups salad dressing.
