Chicken Parmesan Casserole is a breathtaking and mouthwatering six-ingredient entree. This wonderful chicken casserole includes broccoli in a rich cream sauce with cream cheese and parmesan cheese. It's terrific for company dinners like Mother's Day or Father's Day. Gluten free.

Equipment

  • 1 9x13" glass baking dish
  • 1 sauce pan
  • 1 wooden spoon or whisk
  • measuring cups
  • measuring spoons
  • 1 whisk

Ingredients
  

  • 4 chicken breasts boneless, skinless
  • 20 oz. pkg. frozen broccoli florets two ten-ounce packages
  • 2 cups half-and-half or heavy whipping cream
  • 16 oz. pkg. cream cheese cubed (2 blocks)
  • 3/4 tsp. garlic salt or more, if desired
  • 12 oz. parmesan cheese shredded, divided use

Instructions
 

  • Cook chicken, cut into bite-sized pieces.
  • Place frozen broccoli in a lightly oiled 9x13” pan.
  • Place chicken evenly over broccoli.
  • Place half-and-half, cream cheese, garlic salt, and 2 cups Parmesan cheese in a medium sauce pan; cook over low to medium heat.
  • Whisk and cook until mixture is heated through.
  • You will have to use a whisk to make a smooth sauce.
  • Pour sauce over top of chicken in casserole dish.
  • Bake at 350° for 30 minutes, remove from oven and top with additional cup of Parmesan cheese, or more, as desired.
  • Return to oven for an additional 5-10 minutes.
  • Serve.

Notes

NOTE: You can place a cup of parmesan cheese over top of the casserole before baking and add more after. Either way works fine.
