Parmesan Crusted Chicken is absolutely mouthwatering. This wonderful chicken entree has savory flavors include spices and herbs. They also have a sauce made with Greek yogurt and Parmesan cheese which covers the chicken Crunchy bread crumbs or Panko crumbs are spread on top. This delicious entree is terrific for family or company dinners.
1/2cupplain Icelandic yogurtor plain Greek yogurt (or use sour cream or mayo)
1/3cupfreshly grated Parmesan cheese
1/2tsp.dried thyme
1tsp.dried marjoram
1tsp.garlic powder
1tsp.lemon pepper
1tbsp.dried parsley
1/2tsp.sea saltor kosher salt
3/4tsp.paprika
1/3cupItalian bread crumbs or Homemade Bread Crumbs, enough to cover chicken well
Instructions
Mix Greek yogurt, cheese and seasonings together in small mixing bowl.
Spray a glass baking dish with olive oil cooking spray.
Place chicken breasts on the bottom of the dish.
Spread cheese mixture over top of the chicken breasts.
Sprinkle bread crumbs evenly over top.
Bake at 425° for about 30-40 minutes until juices run clear when meat is pricked with a fork.
Notes
NOTE: The sauce for this recipe makes enough for 4-6 boneless chicken breasts. So, you can cut down the sauce ingredients in half or use more chicken breasts, if desired. I do not recommend spreading all of it on only two pieces of chicken, because it leaves a strong yogurt taste that way.NOTE: If you want the outside of the chicken to be a little crunchier, I highly recommend substituting Panko bread crumbs instead of using regular Italian-style bread crumbs.NOTE: This recipe does provide a yogurt taste. If you are not keen on that, then reduce the yogurt by half.NOTE: You can also substitute Icelandic yogurt (which is much thicker than Greek yogurt), mayo or sour cream for the yogurt in the recipe.
