Spinach and Feta Hummus is absolutely delightful. This fantastic hummus recipe uses fresh spinach, feta cheese, garbanzo beans and enough spices to give it a little kick. It's a delicious appetizer for tailgating or holiday parties like New Year's Eve. It's also great for the Super Bowl! Low calorie, healthy, gluten free and a great option for after school snacks.
15oz. cangarbanzo beans drained but reserve the liquid (chick peas)
1/2cupreserved garbanzo bean liquid
Instructions
In a food processor or emulsion blender, place olive oil, garlic, lemon, tahini, cumin, coriander, salt and red pepper flakes.
Add spinach, parsley and Feta cheese.
Add reserved garbanzo bean liquid.
Mash garbanzo beans (chick peas) on a plate with a fork.
Add to mixture in blender.
Process until smooth.
This may take a few minutes.
You may have to stir ingredients every few seconds with a wooden spoon to keep the hummus from bogging down.
To serve, spread hummus in a serving bowl and sprinkle more Feta cheese on top for garnish.
Notes
NOTE: One-half cup of reserved liquid seems like a lot. But that’s how much I had to use to make a creamy, almost spreadable consistency.NOTE: Stuff as much spinach as you can get in a cup. I used about three to four ounces total of spinach.
