Marinated Squash and Tomato Salad is a refreshing and irresistible way to use up fresh garden veggies. This delicious marinated salad uses a fantastic sweet Farmer's Boy Greek salad dressing. The combination of flavors is so mouthwatering you'll find yourself enjoying salad more than ever! Gluten free and vegan.

Equipment

  • 1 large salad bowl
  • 1 set salad tongs
  • measuring cups
  • measuring spoons
  • 1 sharp knife to cut vegetables

Ingredients
  

  • 6 or 8 roma tomatoes sliced
  • 1/4 to 1/3 cup red onion finely diced
  • 1 zucchini ends removed
  • 1 yellow squash ends removed
  • 1/2 large red bell pepper diced
  • 1/2 large green bell pepper diced
  • 1/3 cup fresh parsley torn
  • 3 large pepperocinis sliced
  • 1 cup Farmer Boy Restaurant Greek Dressing or your favorite Greek Salad Dressing

Instructions
 

  • Chop vegetables and put in a large salad bowl.
  • Pour Greek salad dressing over top.
  • Toss dressing with veggies and marinate in refrigerator a couple of hours before serving.

NOTE: Farmer Boy Restaurant Greek Dressing is available in the Tampa Bay area as it’s made in Clearwater, Florida. It’s a regional dressing. You may have to order it online at www.farmerboygreekdressing.com or call 727.447.1733 to order. This is a fantastic tasting Greek Dressing though it contains sugar, high fructose corn syrup and MSG.
 
 
NOTE: If you're unable to locate Farmer Boy's Greek Dressing, you can use my homemade Greek Salad dressing with excellent results.
